This year for memorial day weekend a group of friends and I decided to take a trip to Cartagena, Colombia. If you haven’t been I highly suggest a visit it’s always so refreshing experiencing a new culture and of course my favorite part of any trip experiencing THE FOOD. We were fortunate enough to have rented out a small boutique hotel like house that included a kitchen staff who stuffed us silly with plantains, arepa, fresh fruit, eggs with tomato relish, and meats every morning we were there. It really was a dream! I noticed everything that was served to us came with a big side of limes, at first I thought maybe it was just habit for them to put out this common garnish with their meals. But then I found myself squeezing limes on EVERYTHING in sight! My favorite item that I continued to crave was the fruit, which returning back to the states and missing vacation, I decided to incorporate this lime obsession into the good ole avocado toast we all know and love with a little kick.

Ingredients:

1/2 Mango sliced

1/2 Avocado (ripe)

3 Bread slices (of your favorite kind)

1/4 tsp. Cayenne Pepper

1/2 Lime

1/4 tsp. Koser Salt

Method:

  • Toast each slice of bread on both sides.
  • Once the bread is toasted, using a fork for ease, mash equal amounts of avocado on each slice and lay in a single layer slices of mango on top.
  • Squeeze lime juice over top and sprinkle with cayenne and salt. Enjoy the fruits of this easy labor! 🙂
