Feta in fact does make it betta. I am a strong believer in this cheese, it is so versatile and a sprinkling of this can make something go from mediocre to AMAZING. I was inspired to make this dip by a recent trip I took to celebrate one of my good friends getting married this year. Ok that was my pleasant way of describing I went on yet another bachelorette party. I am in my 20’s and for the past few years my traveling schedule has revolved around bachelorette parties and weddings, which I am not one to complain about. These opportunities allow me to travel and feast, while celebrating my favorite people coming together in holy matrimony. This trip in particular we visited Charleston, South Carolina. If you haven’t been please do us all a favor and plan a food vacation to this small town. Yes A FOOD vacation, you won’t be disappointed. There are so many delicious local establishments and eateries I had no idea how much my taste buds were going to fall in love with this city. Anyways we had brunch at this fantastic spot called Butcher & Bee. Here is where I discovered the glory that is whipped feta and for that I thank them. I don’t know exactly how they made theirs but this is as close to what I could remember how it tasted and I was pretty pleased with my result!

This dip is super simple to make and really is a blank canvas for toppings and accents, you could use it as a spread in a pita or on a sandwich, part of a filling you name it. In this recipe I went for the sweet and salty route by pairing this dip with a drizzle of honey and sprinkling of almonds. However, this dip can be transformed with your favorite herbs, toppings, even spiked with your favorite spices like smoked paprika and coriander. Ingredients:
8 oz. Feta Cheese (crumbled)

4 oz. Cream Cheese (room temperature)

1-2 tbs. Milk (can use any kind of milk you prefer)

Recommended Toppings:

Option 1-

1 tbs. Clover Honey

1/2 tbs. Sliver Almonds

Option 2-

1 tbs. Dill (chopped)

1/4 cup Cucumber (small dice)

1 tsp. Lemon Zest

Option 3-

1/4 tsp. Coriander

Pinch Smoked Paprika

1 tbs. Toasted Pine Nuts

Drizzle Olive oil

Method:

  • Place feta cheese in food processor and pulse until the cheese becomes tiny almost sand looking granules.
  • Add the cream cheese and mix until the dip has come to the desired consistency, this is where you may need to add a little milk to get the dip as smooth as possible.
  • From here add any of your favorite spices, toppings, or herbs and enjoy with chips, pita bread, cut vegetables, etc.
