12 Bacon Slices

(1) 4 oz. Goat Cheese Log

20-24 Dates, pitted

(1) Rosemary sprig, chopped

6 oz. Mango Chutney

2 tbs Honey

Time to get rollin…

But first, preheat your oven to 375 degrees

  • Mix chutney, honey, and chopped rosemary in small bowl and set side 4 tbs of the chutney for glazing and the rest will be for dipping if desired
  • Cut the bacon slices in half
  • Next using a small knife slice date length wise and using finger pry date so that it has an opening
  • Using a small amount of goat cheese (amount will differ depending on size of the date) stuff each date with enough goat cheese to fill the inside of the date.
  • Using half a piece of bacon, wrap the date and secure the bacon around the date with toothpick
  • Repeat until all dates are stuffed and wrapped
  • On a sheet pan (line with aluminum foil), line dates in rows about 1 to 2 inches apart
  • Place the pan in the oven and cook for 5 minutes
  • After 5 minutes brush the dates with the chutney/rosemary sauce, cook additional 5 minutes
  • Turn over, brush with chutney, and cook another 10-15 minutes until the bacon is crisp and browned
  • Finish by brushing with chutney and serve immediately with dipping sauce on the side
