Ingredients
1.5- 2 lbs. Ground Turkey
1 Large Onion, medium diced
1 Red Bell Pepper, medium diced
4 Garlic Cloves, minced
2 tbs. Chili Powder
2 tbs. Cocoa Powder
1 1/2 tbs. Cumin
1 tbs. Garlic Powder
1 tbs. Onion Powder
1 tsp. Oregano
1 tsp. Salt
1/2 tsp. Pepper
1 15 1/4 oz. Can of Corn (drained)
2 16 oz. Can of Kidney Beans (drained)
1 16 oz. Can of Black Beans (drained)
2 14 oz. Can of Fire Roasted Tomatoes
1 1/2 cups Beef or Chicken Broth
2 tbs. Olive Oil
Let’s Do This…
Begin by heating olive oil in large pot on medium high heat, add the onions and saute until translucent about 5 minutes. Add garlic and sauté until fragrant (about 1-2 minutes)
- Add the ground turkey and season with 1/2 tsp. Salt and 1/4 tsp pepper, cook until brown or cooked through, about 8 minutes
- Add the chili powder, cocoa powder, cumin, garlic powder, onion powder, and oregano and stir until mixed well throughout the meat mixture
- Add the drained beans, corn, canned tomatoes and their juices, broth, and 1/2 tsp. Salt and 1/4 tsp. pepper
- Simmer for 30- 1 hour with the lid partially on until chili thickens and flavors develop
- Serve with festive toppings like diced avocado, raw red onion, cheddar cheese, or if you’re really feeling feisty….Fritos!
